Naturally Red Velvet Cake Mix (Gluten-free)
Delicious Red Velvet Cake Mix with naturally rich red velvety color.

WHAT YOU NEED
2 eggs (room temp)
1 cup buttermilk (or yogurt)
½ cup warm water
1 stick butter (softened)
1 tsp vanilla

DIRECTIONS
Preheat oven to 325°F. Oil two 8” cake pans, or line 18 cupcake tins.
In medium sized bowl add cake mix, buttermilk, water and vanilla and mix with a hand or stand mixer for 1 minute on low speed. Add eggs and mix on low for another 30 seconds, scraping down the sides of the bowl with a spatula. Add warm butter and mix for 1 minute on medium speed, until completely blended.
Divide batter evenly between pans. Place pans on the middle rack of the oven. Bake (approx 25-30 min) until toothpick comes out clean. Cool well before frosting with cream cheese frosting.
For cupcakes: Fill each tin with batter ½ inch from top of liner. Bake for 15-20 min.
VEGAN INSTRUCTIONS
Add 1 cup warm water to cake mix, mix well and let sit for 10 minutes. Stir in 2 tbsp oat milk, ¼ cup aquafaba (egg replacement), 1 tbsp apple cider vinegar and 1 tsp vanilla and stir. Blend in ¼ cup coconut oil (melted). Mix well and bake.
